RAFFINOSE

RAFFINOSE (raffinose) — trisaccharide, C 18 H 32 O 16 , contains in sugar beet and molasses, it is constructed of the remains of a galactose, glucose and fructose; under the influence of enzyme of raffinose it is hydrolyzed on fructose and disaccharide melibiose; the emulsin which is contained in almonds hydrolyzes raffinose on sucrose and a galactose; raffinose does not recover liquid of Fellinga, is steady against alkalis, specific rotation [a] D + 104 ° — see.
